Ingredients

To prepare Litti Chokha, you will need the following ingredients:

  • For the Litti:

- 1½ cups Sattu (roasted gram flour)

- 1 large Onion, finely chopped

- 5-6 cloves Garlic, minced

- 1-inch piece Ginger, grated

- 1-2 Green chillies, finely chopped

- 1 tbsp Lemon juice

- 1 tbsp Pickle masala (from any Indian mango or mixed pickle)

- 2 tbsp Mustard oil

- A handful of Fresh coriander, chopped

- Salt, to taste

  • For the Chokha:

- 2-3 medium-sized Brinjals (eggplants)

- 2-3 medium-sized Tomatoes

- 2-3 medium-sized Potatoes

- 1-2 Green chillies, finely chopped

- 1 tbsp Mustard oil

- Salt, to taste

- Fresh coriander, for garnish

Preparation Method

Step 1: Prepare the Stuffing

  1. In a mixing bowl, combine the Sattu, finely chopped onion, garlic, ginger, green chillies, lemon juice, pickle masala, mustard oil, and salt.

  2. Mix all the ingredients thoroughly until they form a cohesive stuffing. If the mixture feels too dry, you can add a little water to achieve the desired consistency.

  3. Add the chopped fresh coriander and mix again. Your Chana Sattu stuffing is now ready!

Step 2: Make the Litti

  1. In another bowl, prepare the dough for the litti by mixing whole wheat flour with water and a pinch of salt. Knead it until it becomes soft and pliable.

  2. Divide the dough into small balls, about the size of a golf ball.

  3. Flatten each ball into a small disc and place a spoonful of the Chana Sattu stuffing in the center.

  4. Carefully fold the edges of the disc over the stuffing and seal it, shaping it into a round ball again.

Step 3: Cooking the Litti

You can cook the Litti using different methods:

  • Roasting on Fire:

- Preheat your clay oven (chulha) or a tandoor.

- Place the littis on the hot surface and roast them, turning occasionally until they are golden brown and cooked through.

  • Oven Method:

- Preheat your oven to 200°C (392°F).

- Place the littis on a baking tray and bake for about 25-30 minutes, turning them halfway through for even cooking.

  • Air Fryer Method:

- Preheat your air fryer to 180°C (356°F).

- Place the littis in the basket and air fry for about 15-20 minutes, shaking the basket halfway through.

Step 4: Prepare the Chokha

  1. Roast the brinjals, tomatoes, and potatoes over an open flame or in the oven until they are charred and soft.

  2. Once cooled, peel the skin off and mash the vegetables together in a bowl.

  3. Add chopped green chillies, mustard oil, and salt to taste. Mix well and garnish with fresh coriander.

Litti Chokha is best served hot, drizzled with ghee for an extra layer of richness. You can also serve it with a side of tangy chutney or fresh curd to balance the flavors.
